Waterstones
Waterstones use water as the lubricant rather than oil and develop a fast cutting slurry with use. Waterstones are not recommended for normal kitchen sharpening use. Though they sharpen quickly and can give an excellent finish, they require special preparation and maintenance.
For Waterstones to work properly, they must be soaked in water prior to use, for about 10 minutes, and the surface must be kept wet to develop the sharpening slurry. The 8000 Grit, however, just needs only to be splashed with water, and kept wet during use. For the straight razor users, please note that the 4000/8000 Combination Grit Waterstone is the perfect stone for you.

Norton Waterstone 220/1000 Combo
NS005 - The Norton 220/1000 Combo Grit is the stone for edge repair.
The stone comes in a plastic case which acts as a portable sharpening station. 8” x 3” x 1”.
220 Grit - This is Norton's coarsest waterstone. It is used to repair
large nicks, or to change the shape of a blade. Because it is so
porous, it needs to have water splashed on its surface often.
1000 Grit - This stone cuts quickly to establish edge geometry. It's
used to restore the edge to prepare it for the next stage in
sharpening.

Norton Waterstone 1000/4000 Combo
NS006 - The Norton 1000/4000 Combo Grit is the perfect all round stone. This is the stone to sharpen and maintain the edge of any knife.
The stone comes in a plastic case which acts as a portable sharpening station. 8” x 3” x 1”.
1000 Grit - Most of our knives get used routinely. The 1000 Grit cuts
quickly to restore the edge to prepare it for the next stage in
sharpening.
4000 Grit – Although it’s a fine grit, it’s designed to cut, not
polish. It leaves a refined edge that is razor sharp. You could
certainly go on to the 8000 Grit for that final polish, but for most of
us, for our utility knives, that's not necessary.
